OK, I’ll just come right out and tell y’all this…You. Need. To. Make. This. Now.


I’ve been wanting to work on this for a long time and although I expected to have to make several iterations before I came up with a good one, I nailed this first time out.  This is bomb!  I put this on a burger off the grill the other night and swooned with my first bite.

Do this now – 

  • 12 Ounces Sliced Double Smoked Bacon, cut into 1/2 inch chunks

  • 2 Cloves Garlic, minced

  • 1 Medium Sweet Onion, peeled and diced

  • 1/2 Cup Bourbon

  • 1/4 Cup Apple Cider Vinegar

  • 1/4 Cup Maple Syrup (Use the real stuff for best flavor)

  • 1/4 Cup Dark Brown Sugar

  • 1 1/2 Tablespoon Belly Rub Coffee Rub

Step by Step Instructions

Step 1

Fry the bacon chunks over high heat until just getting crispy

Step 2

Remove the bacon from the pan to a paper towel lined plate to drain

Step 3

Drain all but 1/4 Cup of the bacon fat from the pan

Step 4

Return pan to the heat and add garlic and swish around

Step 5

Add the diced onion and stir or toss to coat with the bacon fat

Step 6

Reduce heat to medium high and sweat the onions until soft and just starting to brown on the edges, stirring ofte

Step 7

Deglaze pan with the bourbon and vinegar scraping up all the delicious bits on the bottom of the pan

Step 8

Add maple syrup, brown sugar and Belly Rub Coffee Rub, stirring to combine

Step 9

Bring to a simmer

Step 10

Transfer all to a slow cooker

Step 11

Cook on high heat for 4 hours

Step 12

After 4 hours, transfer to a food processor 

Step 13

Pulse until slightly chunky
